As far as new years and new beginnings go, I have a lot to be thankful for. To be completely honest my life has been pretty great recently. My brother got ENGAGED on New Years Eve to his awesome girlfriend, and not only am I beyond thrilled, but I’m hugely relieved that I don’t have to keep that secret anymore! Not that I’m a blabber-mouth by any means, but think about the energy and constant vigilance that I had to exhibit in order to keep a secret of such epic proportions! (If you can’t tell, I’m really proud of myself). Then about two weeks after that my boyfriend and I went on vacation to the warm and beautifully sunny Dominican Republic. What happened when I got back? It was SNOWING! Then, THEN people, then I got to bake!
Here’s a little disclaimer for those of you who don’t know me personally; I’m a freak for the frigid weather. Don’t get me wrong, I love that 95 degree weather and scorching heat that is really only enjoyed on a beach chair and in close proximity to a large body of salt water. I love the summer time when weather is fine! But I also love looking outside and seeing that beautiful white snow covering everything in sight. I seriously enjoy walking outside (bundled up to my teeth, mind you) and realizing its about 19 degrees out, and taking a breath that feels so cold that you think your lungs have started forming icicles. My love affair with the snow has lessened somewhat, now that I am responsible for de-icing my windshield and defrosting the car on a daily basis, especially since I can’t exactly reach the top of my honda civic. (I guess that it’s a good thing I like the cold, seeing as its TWELVE DEGREES today!)
But back to the baking. That’s why we’re all here isn’t it? Its been a while since I did something completely indulgent and chocolatey and rich, so I decided I would go that route. Cafe Mocha Cupcakes… like coffee, but more better because it’s a cupcake!
I was brainstorming what to make and stumbling on Pinterest when I found My Baking Addictions blog. First of all, her blog is adorable and the pictures are perfect, but the recipes are to DIE for! I used her Café Mocha Cupcake recipe and let me tell you, it was wonderful!! The Cupcake itself was a light and fluffy yet incredibly moist and the icing was the perfect pairing. While most people have a sweet tooth, I have what I want to call a chocolate tooth. Rich deep dark chocolate is what I crave, but the sweeter doesn’t always mean better! I typically find frosting to be too sweet, so I constantly cut down on the sugar. (For this recipe, I used about a cup less of confectioners sugar). The consistency of this frosting was PERFECT, and balanced well with the richness of the dark chocolate cupcake.
And for the typical cupcake-on-the-fork drool picture, I won’t disappoint my fans!
P.S. Check out my awesome holiday gift! I guess people got tired of my brining in tinfoil-lined boxes with Ceran-wrap taped to the top as my preferred method of transfer. I definitely got the message loud and clear because TWO DIFFERENT people bought me the same thing! No complains here, it’s so much easier!
